What Makes Specialty Coffee Different?


Creating exceptional specialty coffee involves a meticulous process. Unlike other types of coffee, which may lack standardized procedures, specialty coffee adheres to strict quality standards and consistency. Every bean is hand-picked and inspected for quality and taste, focusing on Arabica coffee for its superior aromas and flavor profiles. Let’s take a closer look at the steps involved.


Harvesting

Specialty coffee beans must be picked when ripe. Using a refractometer to measure Brix degrees indicates the sweetness and sugar content in the cherry. A Brix value of around 20° is optimal for the best flavor.


Cleaning

After harvest, cherries are inspected and washed in clean water to remove defects, leaves, and dirt. Any under-ripe or green beans are discarded, and this process is repeated twice for thorough cleaning. This step is essential for maintaining coffee quality and consistency.


Anaerobic Fermentation

We utilize artisanal bioreactors made from 200-liter plastic barrels, equipped with pH meters and thermometers for controlled fermentation. This process prevents oxygen contact and lasts up to 4 days, significantly influencing the coffee’s flavor compounds.



Washed Coffee Process

Cherries are pulped to remove the skin and mucilage, then fermented in water to loosen any remaining mucilage. After thorough washing, the beans are dried on elevated beds. This method yields bright and clean flavor profiles.


Honey Coffee Process

Similar to the washed process, cherries are pulped, but the mucilage is retained on the beans. As it caramelizes during drying, the mucilage adds sweetness. This method enhances sweetness, and fruitiness, and provides a lingering aftertaste.


Natural Coffee Process

Whole cherries are spread out on drying beds immediately after harvest and left in the sun to dry for several weeks. During this time, natural fermentation occurs, as the sugars in the fruit break down without the use of water. This results in a unique, heavier body and a rich, complex range of flavors.
